Set up in 2014 by Susanna and James Forbes, Little Pomona Cidery and Orchard is based in Thornbury, North Herefordshire. They have 5 hectares beneath an ancient hill fort, which they cultivate in as natural a way as possible, making ciders and perries with complexity and depth that are fantastic with food. Pomona is the Roman goddess of fruit trees and the orchard, and the taste of the Little Pomonas, lives up to this Godly associtation. Their ciders are typically made using the traditional method – where an alcoholic fermentation takes place in the cellar before bottling with the addition of a liqueur de tirage to create a secondary fermentation in bottle. The result is complex ciders with plenty of alcohol and bubbles that are worth serious contemplation.

Table Cider is a blend of Browns Apple, from Throne Farm in Weobley, Dabinett from the Home Orchard and an orchard blend from Oldfields Farm. The Browns were fermented in steel and mixed with a proportion of the Dabinett; part of this blend was aged in ex-rum casks for four months. The orchard blend and the rest of the Dabinett were fermented together in steel. The components were brought together and bottled with the addition of sugar and yeast to stimulate a secondary fermentation in the bottle – this is Champagne made from apples (except for the lack of disgorgement!). Fresh fruit in abundance with juicy tannins and nice acidity, to round the cider and create a delicious ‘Table Cider’ that would really enhance any evening. Or afternoon. Or lunch. Or brunch.
