For 23 years, Romauld and Stephanie Sauvage worked at various wineries in the Loire: Jo Pithon, Francois Poirel & Oliver Cousin. A lot changed in the world of natural wine between the early 1990s and 2014, and better-late-than-never the Sauvages set up their own Domaine in 2014. With just 1ha to start with, they now have 2.5ha of Cabernet Franc & Grolleau – most of which are on vines between 60-70 years old. They do everything by hand, and use no chemicals whatsoever in the vineyard or they cellar: they are natural to the core. Their son is in the cellar at Francois Saint-Lo, and it was through Saint-Lo that these wonderful and rare wines were brought to the UK. They share a red line of purity and energy.
100% Cabernet Franc from vines planted around 55 years ago on clay and limestone rich soils. The grapes are hand-harvested and macerated for three weeks, with alternating layers of whole bunches and destemmed grapes. Then grapes are then pressed and the juice spends nine months ageing in old barrels before bottling with any added SO2. The result is a dense and velvety red with lots of fruit, classic Cabernet Franc green bell pepper tinges and supple tannins. Powerful but with lots of drinkability, a perfect red for the short days and long nights of winter.
