As a young couple, Celine and Laurent Tripoz set up a domaine in 1986. They started by selling grapes and then in 1990 decided to produce their own wine. It wasn’t long before they started to farm organically; biodynamics followed soon after and now they are both organic and biodynamic certified. They have 11.5 hectares, with some of the newer parcels never having received any chemical treatment. The vineyards are in southern Burgundy, around the commune of Loché in the Mâconnais, with clay soils and lots of limestone. They work naturally in order to highlight their terroir, resulting in minimal SO2 in all the cuvées, with no additions whatsoever in their sparkling wine.
The Crémant is made with 100% chardonnay, from approximately 30 year old vines. It is a ‘brut natur’ so there is no dosage (added sugar) after the second fermentation. It spends 12 months with the lees, to give some body and bready notes, and is also without any added SO2. All in all this gives a lean, fresh, dry and succulent sparkling wine, reminiscent of high quality, delicate champagne.
