Started in the early 2000s by husband and wife Rodolphe Gianesini and Laetitia Ourliac, Fond Cyprès is a 15 hectare estate in northern Corbières. They were still finding their path when they met none other than legendary low-intervention Burgundy winemaker Freddie Cossard in 2004, and from then on Fond Cyprès has been natural to the core. Organic certification came in 2006 and they have gone from strength to strength ever since. Blue marl soils dominate, and the intense heat of the summers down in south-western France are mitigated by the shadow of the nearby Saint Jaume forest. They are going against the local norm, and mostly producing single varietal wines to highlight individual terroir and the purity of their fruit from the clean and natural working methods. Some of their wines are coming from their own vineyards, and some are made from grapes that they buy from trusted, organically certified neighbours.
100% Chardonnay from calcareous soils, from the negociant line, the grapes are hand harvested and pressed directly into cuve (fiberglass tanks) and aged for 9 months after fermentation with indigenous yeasts. It is bottled with hardly any intervention and gives a wonderful expression of a mineral and lean Chardonnay. With lots of citrus, stone fruits and aforementioned minerality, it is in a Chablis-style with riper fruit and simpler finesse.
