A fresh and easy rosé that should always be cold and ready for a moment of sunshine

Tasting Notes: Red fruits, unripe berry acidity, gluggable
Started in the early 2000s by husband and wife Rodolphe Gianesini and Laetitia Ourliac, Fond Cyprès is a 15 hectare estate in northern Corbières. They were still finding their path when they met none other than legendary low-intervention Burgundy winemaker Freddie Cossard in 2004, and from then on Fond Cyprès has been natural to the core. Organic certification came in 2006 and they have gone from strength to strength ever since. Blue marl soils dominate, and the intense heat of the summers down in south-western France are mitigated by the shadow of the nearby Saint Jaume forest. They are going against the local norm, and mostly producing single varietal wines to highlight individual terroir and the purity of their fruit from the clean and natural working methods. Some of their wines are coming from their own vineyards, and some are made from grapes that they buy from trusted, organically certified neighbours.
100% Malbec from their negociant line, the wine is made simply by directly pressing the Malbec into stainless – the slight pink colour comes from the few hours of pressing time – and then rested in those tanks for a few months before bottling unfined, unfiltered and with very little added SO2. The result is a fresh and light rosé, with red fruits, great acidity and a low alcohol – there should always be one in your fridge in the summer!
