Isabelle and Franck Pascal have been making organic Champagne with biodynamic principles for almost 25 years, with organic certification since 2007. Franck followed an unusual path into winemaking, having been an engineer in the army and seeing the effects of chemical weaponry paired with the premature death of his brother pushing him towards chemical-free work in winemaking. He has small plots of vineyards spanning large parts of Champagne, which he ploughs by horse, allowing this variety of terroir to bring complexity to his wines. He has a majority of Pinot Meunier, typically the third most-common grape of Champagne, and this gives a distinct style with more prominent red fruits even in the white Champagnes.

Fluence is comprised of 60% Pinot Meunier, 34% Pinot Noir and 6% Chardonnay, from predominantly the 2014 and 2015 vintages, that are planted on a combination of flint, millstone and hard limestome soils with an average vine age around 45 years. These handpicked grapes undergo the first fermentation in steel vats with indigenous yeasts. The secondary fermentation takes place in bottle and then fine lees are kept in bottle for four years before disgorgement, after which there is no dosage. These aspects create a balance between a powerful and yeasty Champagne and a lean and mineral style, which combine into something quite magical that is perfect for any occasion – special or otherwise: treat yourself.
