Started in the early 2000s by husband and wife Rodolphe Gianesini and Laetitia Ourliac, Fond Cyprès is a 15 hectare estate in northern Corbières. They were still finding their path when they met none other than legendary low-intervention Burgundy winemaker Freddie Cossard in 2004, and from then on Fond Cyprès has been natural to the core. Organic certification came in 2006 and they have gone from strength to strength ever since. Blue marl soils dominate, and the intense heat of the summers down in south-western France are mitigated by the shadow of the nearby Saint Jaume forest. They are going against the local norm, and mostly producing single varietal wines to highlight individual terroir and the purity of their fruit from the clean and natural working methods. Some of their wines are coming from their own vineyards, and some are made from grapes that they buy from trusted, organically certified neighbours.
Coming from their Domaine, this wine is 70+ year old Grenache Noir ‘of the Saint Jaume woods’ (du bois Saint Jaume). Three sides of the vineyards are forest, creating a cooler climate and elegance to the wine – even in the very hot 2018 vintage! 3 weeks maceration, after de-stemming, in concrete is followed by a year aging in old oak barrels to soften the ripe tannins and round the wine. Purity of fruit is noticeable, with complexity coming from forest floor and gamey notes, that compliment fresh acidity and supple tannins.
