Eric Bordelet was a sommelier at 3 Michelin-starred Arpège, in Paris, until cult natural wine producer Didier Dagueneau convinced him to make a natural cider at his family’s ancestral orchards in Normandy in 1992. He has around 19 hectares of biodynamically farmed orchards, planted on a mix of schist and sedimentary rocks in southern Normandy with around fifteen varieties of pear planted and more than twenty varieties of apple. The ciders and perries are made essentially as ‘pet-nats’ – so they are single fermentation sparkling, with bottling happening during fermentation to allow it to finish in the bottle giving delicate bubbles and low alcohol.
Poire Authentique is an ever-so-slightly off-dry perry, with great acidity to balance the hint of residual sugar. It is like soaking up all the essence of pears. Ripe yellow pear, fresh green pear, a little poached pear and then a few bubbles on top. Fermented in steel before bottling during the fermentation, made from around fifteen pear varieties – it is nothing short of breath-taking. Did we mention it tastes like pears?
