Yeasty and aromatic pet-nat that is very hard to put down

Cosmic was set up by Salvador Batlle in 2013, in the town of Agullana, northern Catalonia. He now has 9.5 hectares spread across two distinct regions: Alt Empordà and Baix Penedés. Salvador’s family has been growing grapes for many years, which were sold to larger wineries - so farming vines is in his blood. He studied agriculture, viticulture and solar energy before travelling to New Zealand in 2011 for a vintage. When he returned to his family in Penedés, he and his father had different visions about the family’s vines and land - leading to his creation of Cosmic in 2013. His domaine is certified organic, as well as incorporating many biodynamic principles. In the cellar different vessels are used to get the best out of his grapes - glass eggs, clay amphora, steel tanks, old oak and chestnut barrels - before bottling unfined, unfiltered and only a tiny amount of SO2 if needed. He is reigniting some less common local grapes (such as Grenache Blanc and Gris, and Carignan Blanc and Gris), partly due to his sadness that in the wine industry “decisions are made in offices and they forget about tradition and the terroir”.
Vitalitat is 92% Parellada (a grape often grown in Catalonia for Cava blends) and 8% Moscatell, from a white clay vineyard at around 500 metres altitude. The grapes are destemmed and then macerated for three days to extract only a slight colour but some intense aromatics, particularly from the Moscatell. It is gently pressed before spontaneously fermenting in stainless steel tanks. The wine is a petillant naturel (pet-nat), so before the aforementioned fermentation is complete, the wine is bottled – allowing the fermentation to finish in the bottle, trapping CO2 and making those tantalising bubbles in the wine. It is yeasty, as it is not disgorged, with precise energy, freshness, almost tart stone fruit notes and then a more aromatic edge from the Moscatell. Take this to the terrace and stick another couple of bottles in the fridge, because the first one will be gone before you know it!
